Chai Eggnog for Your Next Winter Gathering

Every winter, I make Chai Eggnog during family gatherings, and it's always a guaranteed hit! Spiced, creamy and heartwarming - it can be enjoyed on its own or spiked with a dash of rum.

Since many of you have been asking, I felt it was about time I share my recipe with you.

Chai Eggnog

Prep time: 20 mins

Serves: 6

Ingredients

  • 3 Tbsp Spice Island Chai
  • 5-6 slices fresh ginger, smashed
  • 2 cups eggnog (500ml) - store-bought works great
  • 1.5 cups water (350ml)
  • 3 cinnamon sticks (optional)
  • Dark rum to taste (optional)

Instructions 

  1. Simmer fresh spices (ginger, cinnamon) in boiling water over the stove for 5 minutes until the infusion is spicy and fragrant.
  2. Add tea leaves and infuse for 3-5 mins until the color is a bright golden.
  3. Add eggnog on high heat. Let the infusion bubble and rise to top and then lower the heat. Repeat two or three times so that the mixture rises and falls several times, making sure the tea does not spill over. This helps create a creamy texture. Total 5-10 mins. 
  4. Strain and serve!

* Optional: Spike with a dash of rum
**For a dairy-free version, look for alternative eggnogs with a coconut or almond mylk base.
